Sesame Sauce with Tofu Noodles

INGREDIENTS:

  • 1 Packet of Shirataki Tofu Noodles (found in the refrigerator section of your Asian store)
  • 1/4 cup Soy Sauce
  • 1 Tablespoons Sugar
  • 4 cloves Garlic, Minced
  • 2 Tablespoons Rice Vinegar
  • 4 Tablespoons Pure Sesame Oil
  • 3 Tablespoons of Avocado oil (or Evoo)
  • 4 whole Green Onions, Sliced Thin
  • 1 Cup of mushrooms of your choice (or any veggie)

Preparation Instructions

Whisk all ingredients (except noodles and green onions) together in a bowl. Taste and adjust ingredients as needed. Pour sauce over warm noodles and toss to coat. I sauteed my mushrooms with a little bit of avocado oil before mixing them in. Sprinkle with green onions and toss.

Homemade Apricot Fruit Bars (Larabars)

INGREDIENTS:
1 cup packed of chopped up dried Apricots
1/4 cup of chopped dates
1/4 cup chopped nuts (optional)

DIRECTIONS: 
Put all the ingredients in a food processor until the ingredients form into a ball. Take an amount, size of a golf ball (give or take), and put it on some parchment paper (dough is sticky), and use it to form your bars. I use a cookie sheet, as it helps make the sides straight.

The amount of the ingredients above make 2 bars, each measuring 3.5 inches x 2 inches. I individually wrap them in plastic wrap, as I like to take them as a snack for work.  Mine last in the fridge for about 7 days.

Nutella Milkshakes

Most of you might know of my newly acquired obsession with all things Nutella. Last month I made some delish Nutella Breakfast Rolls. Well this month we are trying our hand at some tasty Nutella milkshakes . What I love about these is you can make them as bad -or as healthy – as you want. I love using frozen yogurt and Almond milk, but my kids like using 2% regular cows milk. Either way you are going to love these!

Ingredients:
2 scoops of Vanilla Ice cream (or frozen yogurt to make it a bit healthier, which is what I like to use)
4 Tbsp of Nutella (be generous)
2 Cups of Milk (you can use any type, regular, lowfat, Almond Milk, or Coconut Milk!)

Blend all together!
Makes about 3 cups!
