Chocolate Covered Peanut Butter Crackers

I am a bit of peanut butter lover – it’s sweet, and a healthier alternative to other sugary snacks, and I pretty much keep a jar everywhere I spend any quality amount of time. For example – in my snack drawer at work (don’t tell me you don’t have a snack drawer? If you spend 40 plus hours a week in an office where you don’t really take a lunch break – you have a snack drawer). I have a jar of Skippy Natural Peanut Butter and a bag of pretzels.

This is a quick and easy snack that I can keep on hand whenever I get hungry – a much healthier choice than other snacks and filling.

Now there are occasions when I need to get that peanut butter/chocolate fix; my favorite recipe is chocolate covered peanut butter crackers.  If you’ve never made these yourself, you are missing out!

Chocolate Covered Peanut Butter Crackers
makes about a dozen

Ingredients:
melting chocolates (I prefer white chocolate)
½ cup Skippy Natural Peanut Butter
24 crackers

Directions:
Spread a small amount of the peanut butter mixture onto a cracker and sandwich together with another cracker.
Repeat until all the crackers and peanut butter filling have been used.
Put crackers onto a parchment line baking sheet and place in freezer for about 30 minutes.
Melt the melting chocolates and dip the chilled peanut butter sandwiches into the chocolate until completely covered.
Shake off any access chocolate and place back onto the parchment lined baking sheet.
Repeat with the remaining sandwiches and set aside to dry, for about an hour.
Serve and enjoy!

 

Let me warn you – these are addictive! They don’t last long in my house, and I’m sure they won’t in yours either!

How to Beat a Sugar Addiction

I grew up with sugar all around me – Little Debbie snacks  in the pantry, candy dishes with M&M’s, Hershey kisses, and Reeses Cups filled were placed in nearly every room. Our freezer was always filled with ice cream or some delectable treat, and I’m pretty sure that I always had some goodies packed in my lunch -and I had dessert everyday.

It’s no wonder that I have a slight sugar obsession, and it’s one thing I’ve had a problem giving up as I try to lose weight. But it’s one thing I know I must beat in order to look and feel the way I want to – so I decided to do some research on why sugar was so addicting, and how I can break that pattern, and I wanted to share it with you!

how_to_beat_a_sugar_addictionSUGAR IS ADDICTIVE. We all know we get sugar cravings, but did you know chemicals  in sugar can hijack your brain?! Overstimulation of the reward centers in the brain can cause addiction. I’m talking straight up you can be an addict like an alcoholic or drug user.
When we eat foods that contain a lot of sugar, a massive amount of dopamine is released in an area of the brain called the nucleus accumbens.  When we eat these foods often and in large amounts, the dopamine receptors start to down-regulate. Now there are fewer receptors for the dopamine. This means that the next time we eat these foods, their effect is blunted. We will need more junk food next time we eat in order to get the same level of reward.

Sound familiar???

You hear the same thing with dope fiends – the amount they smoked, took or shot up before isn’t enough a month down the line. .. the same thing goes for a sugar addiction.  Though not illegal, it can be just as deadly.

SUGAR AFFECTS YOUR BEHAVIOR. For some people there are anatomical changes in the brain when exposed to their addiction (sugary foods for example). It can literally turn into a full-blown addiction.

SUGAR CAN LOWER YOUR IMMUNE SYSTEM.  Eating or drinking too much sugar (100 grams or more, equal to 2 and a half cans of pop) can reduce  your bodies white blood cell count to kill germs by up to forty percent! The sugar causes a immune-suppressing effect of sugar starts less than 30 minutes after ingesting, and can last up to five hours. (Complex carbs, and starches have no effect on the immune system). 

So now that we know what the sugar does to our bodies (and that it really is an addiction) then we can take steps to  overcome that addiction. 

You can train your tastebuds to enjoy things that aren’t sweet.

Chose ‘good for your sweets’ like strawberries, grapes or berries. Try them frozen, fresh, or with yogurt, low-fat milk, oatmeal or granola (the less sugar the better). 

Make small changes – a little bit at a time, so it sticks. Drink one less pop, drink more water, skip dessert more than you have it, check labels and chose those with less sugar. Making these little steps and conquering them, will set you up for success.

Eat protein! Protein actually is an easy way to curb sugar cravings. High-protein foods digest more slowly, keeping you full for longer – and doesn’t make your blood level spike. Eat lean chicken, eggs, nuts, low-fat yogurt or beans.

Fill up on fiber as well – fiber gives you more energy, and since it doesn’t raise your blood sugar you don’t crash afterwards. Eat fruits, veggies, whole grains. Combine an apple with peanut  butter, etc. 

Exercise. Sorry – you can’t get away from it. Exercise will actually help your mind and body crave healthier foods. When you feel better, you want to do better – including eat better. I can attest to this because I didn’t feel the need to snack on as much sugar when I was regularly working out a few times a week. Start slow – 15 minutes a  day, then increase. Always set goals, met them, and push forward.

DO NOT USE ARTIFICIAL SWEETENERS. No fake sugar, no diet soda pops. Studies show this can actually make you crave sugar more! 

Go cold turkey – or don’t. Some people can  go get over the first 72 hours and be on their road to recovery..some can’t. You know your  body. If you know you aren’t a cold turkey type of person, slowly reduce your sugar intake (using the tips in this post). Do what’s best for you. Remember, Rome wasn’t build in a day! Either will your hot bod!

If you must have your sugar (and I’m not saying give it up completely, that’s  hard and nearly impossible in this day and age) eat something wonderful that you love, and combine it with a protein. Chocolate and fruit, or nuts is a good combo to give you what you are craving, but protein to fight it as well.

Grab some gum. Chewing on some sugar free gum can actually reduce food cravings.

Enlist help – don’t go this alone. I’m sure we all have friends or family members that want to kick the habit as well. Get a partner to help you through it; exchange recipes (maybe even make meals in bulk and split them) work out together, share your tips, and your struggles. Everything is easier when you have someone by your side!

Stay at the Luxurious St. Paul Hotel

There aren’t many times that I visit a place that I plan to write about that I dedicate an entire post to where I’m staying; normally I’m in a chain run-of-the-mill hotel/motel, or a simple bed and breakfast without any bells and whistles. But walking into the St. Paul Hotel in Wooster Ohio was definitely neither of these.

saint_paul_hotelThe St. Paul Hotel is in the heart of downtown Wooster, Ohio – an up and coming town that offers fun, food – and of course shopping – (that I will go into on another post). I was surprised to find out that the St.Paul hotel has actually been around for ages, opening in the early 1900’s. Though the hotel kept a part of it’s historic heritage, the hotel was completely renovated in 2011 to a contemporary style, and the work and furnishings were all done by companies right here in Ohio.

saint_paul_hotel_roomOur room was gorgeous  (excuse the wrinkle in the bed, my daughter threw her bag down on it and laid on the bed before I had a chance to even get a picture!) the furniture was gorgeous, the view – fantabulous, and the chairs were even comfortable. A modern sleek room, but with the comforts from home. A large screen T.V. was above the dresser, and side tables with outlets (and reading lamps) next to the bed.

But I have to say one of my most favorite parts – which is ironic because normally it’s my least favorite – was the magnificent bathroom. Usually when I visit a hotel I call down to room service to ask for some shower cleaner. It seems like no matter what housekeeping can’t seem to get it together; it always leaves something to be desired. But I was in clean bathroom heaven at the St. Paul Hotel.

Saint_paul_hotel_bathroom1Each bathroom is outfitted with Italian tile –  that is heated to 85 degrees. Now I don’t consider myself a ‘fancy’ type of person. I go camping, mudding, I can tough it out with the guys – however, I do like the finer things in life as well..and I had no idea how much I would appreciate stepping out onto  a warm floor after a shower. Or even as I was getting ready, to stand on a heated floor like that was seriously divine. Part of me wants to take my husband back to experience just the bathroom, but I’m afraid it would cost me – he’d want to update everything in our bathroom!

The next best thing – or maybe equally as wonderful,was the shower. The showers are enclosed in tempered glass, and features three water sources: a rain forest shower head, a wall mount and a hand held wand. I’m pretty sure I could of just sat a chair in the middle and stayed there all day – it was amazing.

The amenities were like no other  – free drinks in the in-room fridge, a Keurig with coffee and tea K-cups, and you could even call down to the front desk for a free snack if you got hungry. The staff was impressive as well, always greeted us with a smile and a hello in the lobby, and willing to help with any questions or concerns we had during our stay.

Honestly, the only thing I would change is somehow improve their WiFi capabilities – I was disconnected multiple times while trying to get some work done in the evening, and I’m not sure if it was too many people connected, or an overall issue with WiFi in an older building. So if you plan on doing any work while you are there – make sure you have hotspot!

If you are looking for a great weekend getaway, and Wooster in on your radar (which it will be after I tell you about all the other amazing stuff this place has to offer) you need to reserve a room at the St. Paul Hotel. (my parents are already planning a trip as we speak).

Snowman Rice Krispies

This recipe yields a 9 x 13 pan. Depending on the size of your cookie cutter, you’ll be able to make 8-10 Rice Krispies snowmen. The recipe below is for 8 snowmen.

Snowman 2-3

INGREDIENTS FOR RICE KRISPIES
1 cup (2 sticks) unsalted butter
Two 10 oz. bags of mini marshmallows
10 cups Rice Krispies cereal
1/4 teaspoon sea salt

DIRECTIONS FOR RICE KRISPIES
1.   Spray a 9 x 13 pan with vegetable spray and set aside.
2.   In a large sauce pan, melt the butter over low heat.
3.   Add the marshmallows to the melted butter, stirring constantly.
4.   Once the marshmallows are melted, remove from heat and stir in the cereal. Add the salt and stir until well-coated.
5.   Using a rubber spatula (sprayed  with vegetable spray ), transfer the cereal mixture to the prepared pan and press down firmly and evenly.
6.   Allow the Rice Krispies to cool in the pan completely.

INGREDIENTS FOR SNOWMEN
1/2 cup Wilton white chocolate melts
3-4 strings black licorice (cut into eight 4 inch strips)
8 Orange sprees
16 brown M&M’s
16 gummy life savers
Wilton black icing gel

Snowman 2-2

HOW TO ASSEMBLE THE SNOWMEN
1.  Using a circle cookie cutter, cut out 8 snowman faces from your pan of cooled Rice Krispies.
2.   In a microwave safe bowl, melt the Wilton chips for 40 seconds. Stir until melted.
3.   Spread a thin layer of the melted white chocolate on top of each round Rice Krispies treat. (Save any extra white chocolate for the assembly process).
4.   Immediately firmly press a licorice strand onto the top of each snowman to resemble the top of ear muffs.
5.  If the white chocolate on top of the Rice Krispies treats has hardened,  you may have to microwave your remaining white chocolate for an additional 10-15 seconds.
6.  For each snowman, dip one side of 2 lifesavers into the chocolate and place on the snowman to resemble the ear muffs.
7.   Dip one side of 2 M&M’s into the chocolate and place on each snowman for the eyes.
8.   Dip each candy Spree into the melted chocolate and press firmly into each snowman for the nose.
9.   Using a Wilton black icing tube, pipe  small dots to form the mouths.
10.   ENJOY!!
