Instant Pot Mashed Potatoes

One of our favorite holiday side dishes is mashed potatoes. As much as I love them, it’s one thing I have always kind of dreaded making because it takes too long. At least it did until I started using the Instant Pot! It makes making mashed potatoes easier than you would ever realize! Instant Pot Mashed Potatoes are now my favorite!

Ingredients:

  • 6 Potatoes, peeled and cut into chunks
  • 4 Cups broth
  • ¼ Cup butter
  • ⅓ Cup sour cream
  • ¼ Cup milk
  • ½ Tsp garlic powder
  • ½ Tsp onion powder
  • ¼ Tsp dried rosemary
  • Salt and pepper to taste

Directions:

  1. Place the potatoes in the Instant Pot and cover with the broth. Season with salt and pepper.
  2. Close the lid and vent and set on high pressure for 10 minutes.
  3. Manually release steam and open the valve and lid. Drain the potatoes, discarding the stock and keeping the potatoes in the Instant Pot.

  4. Add the rest on the ingredients and mash until everything is combined and the mashed potatoes are creamy, viola! Instant Pot Mashed Potatoes!

Notes:

  • You can double or triple this recipe so it’s a great recipe to feed a large family.
  • You can substitute the butter for ghee and the sour cream for Greek yogurt for a healthier alternative.
  • You can also use vegan butter, yogurt and almond milk for a vegan twist.

Make sure your teen is aware that in the event of a car crash, their seatbelt will prevent them from being ejected from the vehicle, will prevent contact with the steering wheel or dashboard and will keep them in the correct position for airbag deployment.

Finally, slow down!

Most car accidents occur within 5 miles of home. Drivers pay less attention and speed up because they’re overly familiar with the roads. Ask your teen to always keep to the speed limit!

Caprese Spinach Salad

This is a simple yet delicious salad that is PERFECT for the summer. With this heat I haven’t really been wanting to eat much more than some cold fruit, but this Caprese spinach salad is delicious (and oh so healthy).

Recipe for Caprese Spinach Salad
Makes: 1 salad
Servings: 2
Prep Time: 5 minutes
Ingredients:
  • 1 1/2- 2 cups fresh spinach
  • 1 Roma tomato
  • 8 oz fresh mozzarella (ball or log)
  • 2 leaves basil
  • salt and pepper to taste
  • olive oil and balsamic vinegar (or similar)
Directions:
  1. Slice the Roma tomato,mozzarella, and fresh basil leaves.
  2. In a bowl or plate of choice add fresh spinach.
  3. Then alternate the tomatoes and mozzarella slices on top
  4. Place the sliced basil over the tomatoes and cheese.
  5. Sprinkle a little salt and pepper over the tomato, cheese, basil.
  6. Serve with balsamic vinegar and olive oil (or dressing of choice).

Keto Silk French Pie

Another great Keto dessert recipe – you’ll never feel like you are missing out with this delicious Keto Silk French Pie! This is one of my favorites, and even my non-Keto family loves it.

Ingredients: 

Crust: 

  • 1 ½ cup almond flour
  • 3 TBSP cocoa powder
  • 1  egg
  • 1/3 cup erythritol
  • ¼ cup butter – not melted 
  •  ½ tsp  baking powder
  • ¼ tsp  salt
  • 1 tsp vanilla extract

Chocolate Filling: 

  • 16 oz cream cheese  – set out at room temperature 
  • ¾ cup whipping cream 
  • 4 tbsp  sour cream
  • 3 oz dark chocolate – melted 
  • ½ cup  unsweetened cocoa powder
  • 1 tsp  vanilla extract
  • ½ cup erythritol

Whipped Cream Topping: 

  • 3/4 cup heavy cream
  • 2  TBSP  Swerve Powdered Sweetener 
  • 1  tsp  vanilla extract
  •  Chocolate shavings for garnish (optional)

Instructions: 

  • Preheat oven to 375°F.  Grease a 9-inch pie dish with cooking spray or butter.
  • In a large mixing bowl, add the almond flour, sweetener, cocoa powder, baking powder, salt, and cold butter.  Mix well to combine and be sure the butter is well incorporated.
  • Add the egg to the mixture and blend until the dough looks like crumbles.
  • Spread and flatten out the dough into the prepared pie dish. Bake for 15 minutes. Allow the pie crust to completely cool.

Chocolate Filling

  • In a large mixing bowl add cream cheese, whipped cream, sour cream, melted chocolate, cocoa powder, sweetener and vanilla extract. Blend for about 3-4 minutes or until the chocolate filling is light and fluffy,
  • Spread the chocolate filling into the baked pie crust and refrigerate for 4-6 hours.

Whipped Cream Topping: 

  • In a large bowl, with an electric mixer blend the whipping cream, vanilla extract and powdered sweetener. Beat on high until peaks form.  
  • Top the pie with whipped cream topping and chocolate shavings.
  • Enjoy!  


Keto French Silk Pie

Rich, Creamy and Chocolaty with a delicious Oreo like crust
Course: Dessert

Ingredients
  

Crust
