Strawberry Cheesecake Parfaits

These delish strawberry cheesecake parfaits make a great dessert for get togethers – I’ll be making some for Easter next week! Be sure to get these super cute individual parfait cups (they even come with spoons) to make it even easier to serve.

Ingredients

1 package of graham crackers

1 oz cream cheese

1/4 C sugar

2 TBS whole milk

1 tsp lemon juice and zest

1 container of strawberries, sliced.

1 container of whip cream

Directions

Place graham crackers in a ziplock bag and using a rolling pin,smash the graham crackers set top the side

Cheesecake filling 

In a large bowl add cream cheese, sugar, whole milk and lemon zest and mix using a hand mixer on medium for 23 minutes or until all lumps are gone and it is well blended

Filling your dessert cups 

  • Wash and clean your strawberries
  • In each cup the bottom layer is graham cracker about 1/4 of the way
  • Next add the cheesecake by scooping it or using a pastry bag to fill – fill to the 1/2 way mark
  • Your 3rd layer is fresh cut strawberries layer till right below the 3/4 mark
  • Repeat process if possible
  • top with whip cream

5 Mother’s Day Surprises to Look Forward

For this upcoming second Sunday of May, what are your plans? Are you bringing mother’s day flowers as a gift or taking your mom out somewhere? Well, in case, you still have not geared up for the upcoming Mother’s Day, you can take up some suggestions from the paragraph below. The element of surprise should be the spirit of your gift as that would excite your mom more than anything else.

Surprise # 1: Making a video for mom

This one is going to be fun! Gather your family members and relatives in this video and make a movie for her. These days, so many editing applications are available online and using these tools you can really make a good movie on her. Interview the family and relatives on your mom, capture some old photographs, show those locales that she loves – and make a clever mix of emotion and fun. Play the video in your giant TV screen in drawing room to surprise her. She is bound to get touched with this unique mom’s day gift.

 

Surprise # 2: Admission in some course

This one would be a dream come true for her. May be she always wanted to learn Salsa or piano. Or who knows may be in her twenties she wished to learn a foreign language or pottery. But with due course of time, she could not fulfil that desire. Now is the time to do so – what say? And your mom would enjoy a break from the monotony of daily life which would be simply rejuvenating for her soul.

Surprise # 4: Cook for her

Be it the boy or girl child, it is really a dream for a mom to eat something made by her children. She would be proud of you seriously. Make her sit with popcorn and cold drinks in front of TV screen and engage yourself in kitchen. If you cannot make all her favorite dishes, at least make one or two and order the rest from outside. But make sure to prepare the sweet dish yourself as that is auspicious. You can make mother’s day cupcakes for her.

 

 

Surprise # 5: Ways to relax

There are a few ways to relax and meditation and spa tops the chart. Either take her out to some spa salon or to some meditation center. She would feel younger than before for sure. You can also bring some essential oils and fragrant candles at home which she can use for her meditation and feel lighter.

LEGO Easter Basket Ideas

My son has a tendency to get a bit obsessed with what he loves to play with. A few years ago all I heard about was Power Rangers – he watched it every day on T.V., he had to have all the swords, the figures, the outfits. It was Power Rangers this, Power Rangers that. As he’s gotten a bit older he has started an obsession with LEGO everything, and I have to admit, I’ve probably made it worse. I know that LEGO sets are great for his mind, his creativity, and it’s something that he can play with for years and years (therefore I don’t feel like I’m wasting money!) Easter Chick Cupcakes

 

Ingredients for Cake:

1 Box Cake Mix
Butter Cream Frosting
Yellow Sugar Sprinkles
Chocolate Chips

 

Easy Butter Cream Frosting Recipe

 Ingredients:

5 tablespoons salted butter
5  tablespoons shortening
3/4 teaspoon vanilla extract
2 cups confectioners’ sugar
2 tablespoons milk

Directions:

Beat butter and shortening together with an electric mixer in a large bowl until light and fluffy. The mixture should be noticeably lighter in color. Beat the vanilla extract into the butter mixture. Add sugar, one cup at a time, beating on medium speed until fully incorporated. Add milk, one tablespoon at a time, beating on high until fully incorporated and you have frosting.

Cupcake Directions:

Prepare Cupcakes according to box cake mix instructions

Using Buttercream frosting recipe dye your frosting with yellow food coloring until you reach the desired color.  Save a small amount and dye that a bright orange.

Frost entire cupcake with yellow frosting, and dip into yellow sugar sprinkles.  Add chocolate chips to make the eyes.  You can also add a dab of white frosting to make the eyeball detail.

Using a rosette-frosting tip make “chick wings” on the sides and then sprinkle a small amount of the yellow sugar sprinkles on top.  Then use a small amount of your orange frosting to make a beak and feet for your chick.
