This is an easy, fast and delicious low carb meal that your entire family will love! For my son I leave the jalapeno out,(and just add extra to yours!) This taco cauliflower rice will be a great meal (or side dish) for your family.
INGREDIENTS:
- 1 10 oz package of cauliflower rice
- 1 oz package of taco seasoning
- ⅓ cup red onion – chopped
- 2 Tbsp oil – vegetable, olive or preferred
- 1 tsp minced garlic
- 1 fresh jalapeno
INSTRUCTIONS:
- In a large skillet, saute chopped onion with oil and minced garlic. Cook until onions become tender and translucent.
- Add cauliflower rice and taco seasoning. Continue to simmer until cauliflower rice is cooked.
- Stir in a preferred amount of chopped fresh jalapeno.
- Remove from heat and let cool slightly.
- ENJOY!
