Here’s the part you came for, probably the whole reason you started your blog! When thinking about content for your website, you will want to consider a few questions:

  • What will make my blog unique? What can I talk about that no one else can talk about? Does the world need another style blog with ideas stolen from Pinterest? Or do I have enough of my own ideas to make a blog just about style? Do I need to narrow my subject matter to fit a particular niche?
  • What is my viewpoint? What particular perspective am I trying to show to my audience? What are my consistent policies in regards to the subject matter? For example, if you are starting a home blog, do you think it’s okay to buy new furniture, or do you think people should always buy used furniture to be environmentally responsible?
  • Am I confident enough in my skills as a writer, self-promoter, and photographer? If I am not confident in one or more of these areas, do I have friends or family who can help me? Do I have the budget to hire someone to help me produce or edit this content?
  • What is my policy for guest blogging? Will I let just anyone guest blog or do I only want to target specific interest groups for content?
  • Who is my target audience? How do I reach them? How do I keep from trying to satisfy too many readers and so lose track of my target audience? Consider joining a blogging network to help your website reach more people and to find partnerships.

This is probably the whole reason you started a blog, so spend a lot of time considering these questions, and most importantly, have fun! Blogs should provide you with a fun means to express yourself and communicate with others, so don’t forget about that part!

Baked Pears

-2 Pears
-Brown Sugar
-Cinnamon
-Walnuts (optional)

Recipe:
-Preheat oven to 350 Degrees
-Slice pears down the middle lengthwise and scoop out the seeds/core
-Fill with walnuts (optional)
-Sprinkle Brown sugar and cinnamon all over the pears
-In a baking dish, put enough water to cover the bottom and place pears inside
-Bake for about 25-30 mins
-Eat and Enjoy!!

Chicken Chipotle Burrito Bowl

You guys know I have a hard time coming up with tasty dinners that keep my families tastebuds entertained, as well as low in calorie and QUICK lol. I make tacos at least one night a week (seriously how easy and delicious are tacos?!) But we decided to do a bit of a ‘copy cat’ burrito bowl recipe, and boy is it DELICIOUS! Pretty easy to make (and yes sometimes I’m lazy and use already made rice packets/bowls – don’t judge me).
You definitely need to try this DIY burrito  bowl and let me know what you think!
Rice:
-1 Cup White Rice
-2 Tablespoons Lime Juice
-1/2 teaspoon Sea Salt
-2 Tablespoons Cilantro
Chicken:
-Grilled Chicken (cubed)
-1 Tablespoon Vegetable Oil
-Mrs. Dash Southwest Chipotle Seasoning
-Garlic Powder
-Cayenne Pepper
Toppings (Optional) :
-Shredded Cheese
-Sour Cream
-Salsa
-Lettuce
-Beans
– Guac

Recipe:
– Put oil and seasonings into a Ziploc bag with your chicken, shake, and allow to marinate for at least an hour
-Cook chicken how you prefer, I cooked mine on the grill until it was cooked thoroughly
-Cook your rice, while still hot mix in lime juice, sea salt, and cilantro
-In a bowl, first lay down your rice, top with chicken, and finish off with your toppings that you prefer!
Super simple meal for a weeknight and a great recipe for a big family!!

FRESH SPINACH & RICOTTA STUFFED SHELLS

Yields: 4 servings

Prep time: 15 minutes | Cook Time: 35 minutes | Total time: 50 minutes

 

Ingredients:

16 jumbo pasta shells + a few extra shells to allow for breakage while pasta is cooking

1 ½ tablespoons olive oil

2 teaspoons garlic, minced

4 cups (packed) fresh spinach leaves, roughly chopped

12 oz. ricotta cheese

1 cup shredded mozzarella cheese

½ cup grated Parmesan cheese, plus extra for serving

1 large egg

1 teaspoon salt

½ teaspoon ground black pepper

1 ½ cups marinara sauce

Directions:

  1. Preheat oven to 375 degrees F. Cooke the pasta al dente, according to directions on packaging. Drain and set aside.
  2. Heat olive oil in a large skillet over medium-high heat. Add the garlic and cook until it begins to brown (less than 2 minutes). Add the spinach and cook, stirring occasionally, until the leaves begin to wilt but still bright green in color. The spinach should be reduced by half. Remove from the heat and let cool.

  3. In a mixing bowl, stir together the spinach, ricotta, mozzarella, Parmesan, egg and salt and pepper until thoroughly combined. Pour ½ cup of the marinara sauce into the bottom of a shallow 9×9 baking dish. Stuff each pasta shell generously with spinach and ricotta mixture, and place in baking dish.
  4. Cover with remaining sauce and bake covered with aluminum foil for 25 minutes. Remove the foil and continue baking until the top begins to brown and the sauce begins to bubble, another 10-15 minutes. Serve warm with a sprinkle of Parmesan.

Note: This dish can be made a day in advance. Keep refrigerated until ready to cook – use same temperature, but add 10-15 additional minutes to cooking time.

Refreshing Strawberry Lemonade

Recipe:

1 C fresh squeezed lemonade
1 tsp fresh grated lemon peel
2 C water
1 C sugar
3 + C fresh strawberries.

Directions:

-Hull and puree 3 C of fresh strawberries.
-In a pot add the water and sugar and heat until it reaches a boil.
-Continue to boil.
-Add lemon juice and the grated lemon peel.
-Allow the combination to simmer for one minute.
-Remove the pot from the heat and allow to cool.
-Strain the above mixture and pour into a pitcher.
-Add the pureed strawberries to the pitcher.
-Stir well.
-Add ice and stir.
-Pour into individual glasses and garnish with a fresh whole strawberry.
