FRESH SPINACH & RICOTTA STUFFED SHELLS

Yields: 4 servings

Prep time: 15 minutes | Cook Time: 35 minutes | Total time: 50 minutes

 

Ingredients:

16 jumbo pasta shells + a few extra shells to allow for breakage while pasta is cooking

1 ½ tablespoons olive oil

2 teaspoons garlic, minced

4 cups (packed) fresh spinach leaves, roughly chopped

12 oz. ricotta cheese

1 cup shredded mozzarella cheese

½ cup grated Parmesan cheese, plus extra for serving

1 large egg

1 teaspoon salt

½ teaspoon ground black pepper

1 ½ cups marinara sauce

Directions:

  1. Preheat oven to 375 degrees F. Cooke the pasta al dente, according to directions on packaging. Drain and set aside.
  2. Heat olive oil in a large skillet over medium-high heat. Add the garlic and cook until it begins to brown (less than 2 minutes). Add the spinach and cook, stirring occasionally, until the leaves begin to wilt but still bright green in color. The spinach should be reduced by half. Remove from the heat and let cool.

  3. In a mixing bowl, stir together the spinach, ricotta, mozzarella, Parmesan, egg and salt and pepper until thoroughly combined. Pour ½ cup of the marinara sauce into the bottom of a shallow 9×9 baking dish. Stuff each pasta shell generously with spinach and ricotta mixture, and place in baking dish.
  4. Cover with remaining sauce and bake covered with aluminum foil for 25 minutes. Remove the foil and continue baking until the top begins to brown and the sauce begins to bubble, another 10-15 minutes. Serve warm with a sprinkle of Parmesan.

Note: This dish can be made a day in advance. Keep refrigerated until ready to cook – use same temperature, but add 10-15 additional minutes to cooking time.

Refreshing Strawberry Lemonade

Recipe:

1 C fresh squeezed lemonade
1 tsp fresh grated lemon peel
2 C water
1 C sugar
3 + C fresh strawberries.

Directions:

-Hull and puree 3 C of fresh strawberries.
-In a pot add the water and sugar and heat until it reaches a boil.
-Continue to boil.
-Add lemon juice and the grated lemon peel.
-Allow the combination to simmer for one minute.
-Remove the pot from the heat and allow to cool.
-Strain the above mixture and pour into a pitcher.
-Add the pureed strawberries to the pitcher.
-Stir well.
-Add ice and stir.
-Pour into individual glasses and garnish with a fresh whole strawberry.

Why You MUST See AVENGERS: Age of Ultron This Weekend!

I have to admit I am a big super hero movie fan. Before it was even a fad I loved watching movies where being a hero, and good prevailed. So of course when Avengers first came out – and all the Captain America, Iron Man , Hulk and Thor movies – we made sure to go watch them asap!
So when I became a blogger and I started to get opportunities to get a sneak peek of these and other Disney movies, I was obviously beyond excited. Now when I saw the previews of  the new Avengers: Age of Ultron I thought , like most sequels, it wouldn’t compare to the original. However, after spending 2 hours glued to my seat (Ok, well except for one bathroom break with my son because he got a large ICEE) I was impressed to say that – wait for it …

Was even better than the original.

I’m not sure if it’s because in the first Avengers movie they were all just getting to know each other, or maybe I’ve just grown to love all the Avengers in an individual sense since they had their own movies. But I loved LOVED the interaction between all the Avengers, and I was suprised at how many times we literally laughed out loud.

I also suggest if possible SEE IT IN 3D! I have been to plenty of 3D movies that I felt disappointed in; normally they are blurry, or it doesn’t feel like a 3D film, but the Avengers didn’t disappoint. Though some of the actions scenes were a bit confusing to the eye (but it  could be just me, or where we sat, towards the front) but overall it was more than just a movie – it was an experience!

Avengers: Age of Ultron opens in theaters this Friday (check your local theaters for midnight screenings)!

Also – take your kids dressed at their favorite superhero – we saw ALL kinds at the preview this week!

NO BAKE PEANUT BUTTER REESES ICE CREAM PIE

If you are looking for a delicious indulgent dessert that doesn’t require a lot of fuss, you’ve come to the right place for this tasty no  bake peanut butter reeses ice cream pie. Please do note, that it’s best if you can freeze the crust and such overnight. So if you are having company this weekend make sure to slip it in the freezer the night before your guest arrive.

Ingredients:

1 Quart Peanut Butter Flavored Ice Cream or Reese’s Chunk

5 tablespoons Melted butter

Nutter Butter Cookies

Reese’s Pieces

Whipped Cream

Directions: 

Allow ice cream to sit and thaw for quite a while until it becomes creamy and able to be stirred. Mix 12 bag of Reese’s Pieces in with the ice cream and stir to combine.   Add approximately 20 Nutter Butter cookies into a food processer along with 5 tablespoons of melted butter..  Spoon Cookie mixture you just made into a 9-inch pie pan and form crust.  Pour ice cream and Reese’s mix into the piecrust and freeze for several hours or overnight.  Right before you are ready to serve, use the remaining Reese’s pieces and top your ice cream cake and decorate edges with whipped cream.

Note: Do not add the Reese’s Pieces to the top cake before you freeze it otherwise the colors will bleed.
