Tips to Get Ahead of Cancer

My heart nearly broke when I heard the news – my Grandpa, my favorite man in the world, had cancer. I was twenty-one and pregnant with my first child. My heart ached at the thought of my daughter growing up and not knowing this giving, kind-hearted man. The man who made me call him “Dad” when I was a kid because he was just obviously too young to be my Grandpa (which he was, I’ll give him credit. He became one at 34 after all). The one who would give anyone the shirt off his own back if he needed it – I never knew how he kept his auto glass business running considering he always helped people out who didn’t have the money to replace their windshield, or repair a side mirror.

I prayed and prayed that he would make it until my daughter was born – she was due in March, and I teased him relentlessly about being a great-grandpa at just fifty-five. The cancer had taken over so much of his body – even his brain, and there were times he didn’t know who we were. I will never forget one of the last times we went over to his condo to have pizza and watch a movie with him. He seemed to be doing a bit better, and we were all pretty optimistic. For the first time in months he was himself – teasing me, telling stories on my Dad, and giving my Mom a hard time. If I knew that would have been one of the last times I talked to that Grandpa I had loved so much – I would have stayed there all night.

My Grandpa was in the hospital over Thanksgiving – his favorite holiday. We went up to see him, and he was incoherent, and very agitated about getting another CAT scan. He always hated hospitals, and I can imagine how confusing and upsetting it was for him to be stuck there for weeks. He pointed to me before we left, and shook his finger at me, telling me to be good. I laughed and kissed him bye, not knowing that was the last time I would ever see him.

My Grandpa smoked and drank like there was no tomorrow – the only physical activity he got in a week was his Sunday golf game, and he ate cheese, chips and lunch meat like it was going out of style. He loved and enjoyed life but I have no doubt if he could see the future – including all seven of his great-grand babies – he would have changed some of his habits and done everything he could to try and prevent the illness that took his life.

A few years ago it hit my Dad pretty hard when he turned 50 – he knew he was just a few years away from the age my Grandpa was when he passed, and my Dad did not want to miss out on watching his grand kids grow up. He started working out, and eating healthier. Which made us all start thinking – what are some steps we can take to be proactive – and get ahead of cancer?

Slow Cooker Sweet and Sour Chicken

Sweet and sour chicken is a family favorite – one of the very few meals that everyone in my family enjoys. What makes this recipe even greater is that you can cook it in your slow cooker /crockpot and leave it be – and enjoy a delicious dinner without slaving over the stove!

Ingredients:

  • 1-pound boneless skinless chicken breasts
  • 2 cloves of garlic, minced
  • ½ teaspoon of fresh ginger, minced
  • ¼ cup chicken broth
  • ⅓ cup of tamari or low sodium soy sauce
  • 1 teaspoon of dark soy sauce – if you do not have this simply use ½ teaspoon of brown sugar instead.
  • 3 tablespoons of honey (can also use brown sugar)
  • 1-tablespoon apple cider vinegar
  • 3 tablespoons ketchup
  • ¼ teaspoon of sesame oil
  • ¼ teaspoon of black pepper
  • sea salt to taste (optional)
  • 1-cup pineapple chunks (fresh or canned)
  • 1 red bell pepper, cut into 1″ pieces
  • 1 green bell pepper, cut into 1″ pieces

Sauce slurry

  • 3 tablespoons of cool water
  • 2-3 tablespoons of cornstarch

Crockpot Sweet & Sour Chicken Final 6

Directions:

  • Spray inside of slow cooker with non-stick coating spray.
  • Place chicken inside the slow cooker.
  • In a medium bowl whisk together chicken broth, soy sauce, dark soy sauce, honey, vinegar, tomato paste, sesame oil, garlic, ginger and black pepper. Pour sauce over chicken and push chicken down making sure chicken is covered with sauce.
  • Cover slow cooker with lid and cook chicken on low heat for 5-7 hours or high heat for 2-3 hours.
  • Tear or shred chicken with two forks into chunks if you are using whole chicken breasts.
  • In a small bowl, whisk together the cornstarch and water to make a slurry. Pour in to slow cooker and whisk gently with chicken mixture. Gently fold in pineapple chunks and bell pepper.
  • Cook mixture on high for an additional 20 minutes until sauce thickens and the pineapples and bell peppers are slightly tender.
  • Season to taste with salt
  • Sprinkle with toasted sesame seeds and green onions if desired
  • Serve over brown rice or quinoa.

Dr. Seuss Cat in the Hat Cupcakes

Tomorrow is officially “Dr. Seuss Day” otherwise known as READ ACROSS AMERICA. Did you know that the first RAA day was held in 1998?
The goal of Read Across America Day is to pick up a good book and read it – and even better, read with a child!
What goes better with a good book than a yummy cupcake and a glass of milk? I adore these Cat in a Hat cupcakes that would be a great treat for Dr. Seuss Day that we all can enjoy!

INGREDIENTS FOR HOMEMADE CHOCOLATE CUPCAKES
1 1/2 cup granulated sugar
3/4 cup (1 1/2 sticks) unsalted butter, softened at room temperature
3 eggs
2 cups all-purpose flour
3/4 cup Hershey’s dark unsweetened cocoa powder
1 t baking powder
1 t baking soda
1/4  salt
2 t vanilla
1 cup buttermilk

DIRECTIONS FOR HOMEMADE CHOCOLATE CUPCAKES
1.   Preheat oven to 350°.
2.   Grease cupcake pan or place cupcake liners in pan.
3.   In a medium mixing bowl, add the butter and sugar. With an electric mixer, cream the mixture until light and fluffy.
4.   Add the eggs, one at a time and mix until well incorporated.
5.   Stir in the vanilla. Set aside.
6.   In a separate bowl, sift together the flour, cocoa powder, baking soda, baking powder and salt.
7.   Add 1/2 of the dry ingredients to the creamed butter and mix until just wet and combined.
8.   Add 1/2 of the buttermilk and mix until combined.
9.   Repeat steps 7 and 8.
10. Fill each cupcake liner 3/4 full.
11. Bake for 15-17 minutes or until an inserted toothpick comes out clean.
18. Let cool in pan for 5 minutes.
19. Transfer cupcakes to a wire rack to complete the cooling process.
20. Frost with icing when completely cooled.

INGREDIENTS FOR BLUE BUTTERCREAM ICING
1 cup (2 sticks) unsalted butter
3 cups powdered sugar, sifted
1/4 t salt
1 T vanilla extract
2 T cold milk
Blue food gel

DIRECTIONS FOR BLUE BUTTERCREAM ICING
1.   In a large mixing bowl, cream the butter with an electric mixer.
2.   With the mixer on low speed, add half of the sugar until well blended.
3.   Add the rest of the sugar and beat on medium speed until smooth.
4.   Add blue gel/coloring until you reach your desired color of dark blue.
5.   NOTE: to thin icing, add 1 Tablespoon of milk. If you desire a more thick icing, add 1 Tablespoon of powdered sugar.
6.   Add the icing to a decorator bag with a professional tip or you could just use a Ziploc bag snipped off at the side.
7.   Pipe the icing onto each cooled cupcake.

HOW TO ASSEMBLE THE MARSHMALLOW HAT
1.   Line a baking sheet with wax or parchment paper.
2.   In a microwave safe bowl, microwave the shortening for 40 seconds or until melted.
3.   Add the red chocolate melts and stir until completely melted.
4.   Dip one end of each marshmallow into the melted red chocolate and gently press that end onto a white chocolate Oreo cookie.
5.   Pick each cookie up with the attached marshmallow and dip the top of the marshmallow into the melted red chocolate. Lay on the baking sheet to “set” for at least 20 minutes.
6.   Place the completed Dr. Suess hats onto the prepared cupcakes.
7.   ENJOY!!

What Insurance Coverages Should I Carry on My New Car?

When someone calls my office for a quote, I don’t just give them the lowest coverages for the cheapest price – unless that’s what they ask for. Even then I try to do my job by educating each client to make the best decision for them. Some listen, some don’t.  A few weeks ago I had a 68 year old woman tell me that not one person she’s bought insurance from in the past fifty-two years has ever explained to her what she is getting for her money – never educating her or giving her the options to chose things for herself. So here I am going to educate you, make some basic suggestions but as I always say talk to your agent! Ask them questions , ask what they carry, what they suggest – so you can make sure you are adequately covered for your new vehicle purchase.

Personal Liability. Liability insurance is required by the state, it is what you are responsible for – to someone else, if you are at fault for an accident. Each state has it’s own minimum liability requirements. In Ohio the new limits are 25,000 per person / 50,000 per accident.. Do you know what these numbers mean? If you are involved in an at-fault accident, these are the max dollar amounts that your insurance company will pay out for what you are liable for. If someone is hurt, goes to the emergency room, the doctor, chiropractor, misses work so they have loss wages, or even worse if they lose a limb (or a life) the max your policy will pay out is the $25,000 per person. The max paid out per accident is $50,000 – so if there are multiple people injured in this accident, your policy will only pay out $50k total for their injuries. What if the cost of treatment for these injuries and/or pain and suffering exceeds your policy limits? Then you are held responsible. As you know $25,000 doesn’t go far nowadays for medical bills. Anything over that $25,000 per person, or the $50,000 per accident you will be responsible for. Judges will put liens against your home, vehicles, and any assets you may have, as well as garnish wages. One accident could literally financially ruin you for life. Be smart and make sure that you are carrying higher liability limits – you’d be surprised overall how affordable it is. In order to calculate what you need, you need to know your assets. Generally speaking I think you should carry a minimum of $100,000 per person and $250,000 per accident, though if you can afford it I would suggest more.

Property Damage Liability. Again this is another coverage that you are required to carry to have your license. Property Damage Liability is the damages you are responsible for in an at-fault accident. Whether it be another vehicle (or vehicleS), a fence, a building – this coverage is what pays out. Again, you want to protect your assets and make sure you are carrying enough coverage. In Ohio the minimum requirement is $25,000. You could easily exceed this amount by totaling a newer vehicle – imagine if you hit multiple vehicles? Totaled someone’s new Caddy, or worse? I would suggest carrying at least $100,000 in property damage liability coverage.

Medical Payments. Medical payments is what pays for medical bills for you and your immediate family in your vehicle due to an at fault accident. A lot of people try to bypass this coverage “Because they have health insurance”, but you forget about your high deductibles, and how most medical needs that are required because of injuries during a car accident isn’t something you can put off. The state does NOT require you to carry this coverage – so a lot of people just don’t. Let me tell you those emergency room bills, chiropractic visits and meds add up fast. I would suggest a minimum of $25,000 though if you can afford it – more. It’s better to have it and not need it, than need it and not have it.

Collision Coverage. Collision coverage is what covers your vehicle’s damages if you are at-fault, if fault can not be determined OR if it’s a hit and run accident. A lot of people don’t realize this and assume that if someone else hits them, then they take care of it. If that person is uninsured – then what do you do? Collision coverage is the ONLY coverage that will guarantee repairing your vehicle in an accident. There are a lot of cases where incidents happen on private property (think parking lots at the grocery store, Walmart, the mall, etc) where the police cannot cite anyone at fault. If the other person doesn’t admit fault and tell their insurance carrier straight-up they were the at-fault person, their insurance company WILL fight it. If your car is parked and hit – and the police can’t find who did it – again, no one will pay besides your COLLISION COVERAGE. Now all loan companies require you carry this coverage, but I suggest that if your vehicle has any significant value whatsoever you should carry this coverage. Deductibles range from $100 to $2,000 (a deductible is the part YOU are responsible for, what you pay before the insurance does).

GAP Coverage. Not all insurance companies offer GAP coverage (if not, your lienholder should) GAP coverage gives you peace of mind if your vehicle is totaled before your loan is paid off. Ever been upside down on a car loan? Owe more than it’s worth? This can cause big issues if you total your car – the insurance will ONLY pay the value of the vehicle at the time of the loss – not how much you owe. Check with your insurance agent, or loan company to get the rates on GAP coverage for your car.

Comprehensive Coverage. This is one coverage I suggest that EVERYONE carry, even if you have an old beater vehicle. Comprehensive covers anything besides a collision (or maintenance issue) we are talking glass breakage, vandalism, theft, fire, flood, if you hit an animal, hail damage, tree damage etc. The first time you need a windshield replacement, this coverage will pay for itself 10x over. I suggest carrying (if your company offers it) a ZERO deductible. That means NOTHING out of pocket. Your windshield needs replaced? You get it replaced without anything out of your pocket. period. It’s a very affordable coverage, and usually these types of claims won’t affect your insurance rates like a collision claim would. I always suggest carrying that low deductible because the difference between a lower and higher deductible for this coverage is usually VERY minimal.

Towing & Labor Coverage. Unless your new car offers emergency road service for free, or you have some great roadside assistance program, add this to your policy! It’s super cheap and will pay out for a towing or breakdown claim. Usually ranging from $50 to $150 in reimbursement.
Rental Car Coverage. Now this is the one that no one wants until they need it – rental car coverage gives you a rental car, up to a certain dollar amount, if your vehicle is involved in a collision or comprehensive claim. No they will NOT pay for a rental car if your car breaks down, this is only for a covered claim. But soo many people *think* they have this coverage and don’t. Trust me, not needing to worry about getting a ride everywhere while your vehicle is in the shop makes this entire process a lot easier to deal with. Unless you have a spare vehicle sitting in the garage, GET THIS COVERAGE! I don’t care if you think your brother or mother has a car they’d let you use – things always happen at the worst times. They are out of town. Their primary vehicle is broken down, so they are using their extra car. Most insurance companies get you set up 24 hours after your incident, in a rental vehicle.
