Bacon & Egg Grilled Cheese

When I see my friends out in the country  (or even right outside the city) post pictures or talk about their free-range chickens, how wonderful the eggs  are, and how they notice a difference in their meals I get a bit jealous. OK really jealous. Being a bit of a ‘city’ girl we don’t have the options to have our own chickens (or even a big garden for that matter). So when I heard about Blue Sky Family Farms I was super excited to get a taste of what my friends had been boasting about; free-range, pasture raised eggs.

They are GMO FREE, USDA Organic and Certified Humane. After the many documentaries I’ve watched I have been super conscience about where my eggs come from; and I have found just what I was looking for with Blue Sky Family Farms.

So of course the first thing I decided to do once I got my hands on some, was to make my most favorite breakfast sandwich – the Egg & Bacon Grilled Cheese. (Now my daughter has decided to cut out meat for awhile, so if you have a vegetarian in your family you can make a egg & spinach grilled cheese and it taste pretty delicious as well).

What you’ll need:
(this makes 2 sandwiches)

4 Blue Sky Family Farms Organic Eggs
4 tbsp milk (we use non-fat but you can use any type including coconut or almond milk)
2 thick slices of your favorite cheese (Colby, sharp or american works best in my opinion)
4 slices of bread (I prefer rye, my daughter loves Italian – you can even use tortillas!)
4 slices of bacon (turkey bacon is a great alternative as well)
Salt & pepper to taste
Butter (we use 100% real butter)

Directions:

Beat eggs, milk, and salt & pepper until blended.

Heat about a teaspoon of butter in a nonstick pan on medium heat. Pour egg mixture in, only once pan is fully heated (and  butter is melted). As eggs begin to cook, fold eggs and flip, doing this continuously until there’s no liquid egg remaining. Once fully cooked remove eggs and pan.

In a new or cleaned pan, spread 2 tsp butter evenly on each side of bread. Place 2 pieces of bread in pan (buttered side down of course) and top with scrambled eggs, cheese and bacon. Cover with remaining buttered bread (buttered side up!)

 

Grill sandwiches over medium heat turning until bread is toasted and cheese is melted, which usually takes between 2 to 4 minutes per sandwich.

Serve with your favorite juice, and enjoy!
