Low Carb Mediterranean Cauliflower Pizza

  • Yields: 4 servings (1 12” pizza)
  • Prep: 20 minutes | Cook: 25 minutes | Total: 45 minutes
  • Ingredients:
  • Pizza Dough:
  • 2 cups cooked cauliflower rice
  • 1 cup shredded mozzarella cheese
  • 1 cup grated Parmesan cheese
  • 2 eggs
  • ½ teaspoon dried basil
  • ½ teaspoon dried parsley
  • ½ teaspoon garlic, minced
  • Pizza Sauce:
  • 3 tablespoons tomato paste
  • 1 tablespoon water
  • Toppings:
  • Bell pepper, sliced
  • Tomato, sliced
  • Black olives, sliced
  • Red onion, sliced
  • 1 cup feta cheese, crumbled
  • 1 cup mozzarella cheese crumbled
  • Fresh parsley, chopped

Directions:

  • Preheat the oven to 450 degrees F. Generously spray a 12” pizza pan with cooking spray and set aside.
  • To rice the cauliflower, place chopped cauliflower florets (at least ½ of a large head of cauliflower) in a food processor and pulse just until it reaches a rice-like consistency. Scoop out two cups full and place in a microwave-safe bowl. Microwave for 5 minutes and then allow it to cool on the counter for a 3-4 minutes.
  • (Don’t skip steps 3-4 – they are key to crust holding together) Transfer the cooled cauliflower to a fine mesh strainer and press to release any excess water.
  • Place a clean and thin dish towel over your microwave safe bowl and transfer the cauliflower rice to the center of the towel. Wrap the sides of the towel around the cauliflower and squeeze until you have gotten as much moisture out of the cauliflower as you can.
  • Place the drained cauliflower back in the bowl and add the remaining dough ingredients. Stir to combine.
  • Transfer the pizza dough to the prepared pizza pan and press to flatten into an even crust – being sure not to make the crust to thin. Bake for 15 minutes.
  • Place tomato paste and water in a small bowl and stir to combine. Spread evenly onto crust.
  • Sprinkle cheeses evenly on pizza followed by toppings (except for parsley). Place pizza back in the oven just until cheese has melted.
  • Remove from oven and sprinkle with freshly chopped parsley. Slice and serve warm

Banana Split Bites

Don’t you hate it when you get a craving for a banana split, but then you start looking at all the calories and realize you’d be using up like 2 days worth of calories???

These banana split bites will definitely help curb your sweet tooth and cravings for the high-calorie alternative. They are also super easy to make, which you know is a prerequisite for me to make anything! =)

Ingredients:
-1 Banana
-5 Small Strawberries
-5 Pineapple Chunks
-Chocolate for Dipping
-Nuts for topping

-Toothpicks

Process:
-Cut Banana into small slices
-I bought pre-cut pineapples, but you can cut your own pineapple chunks
-Gather 5 strawberries, find the smallest ones you can

-Start with your banana through the toothpick, followed by the pineapple, and lastly the strawberry

-Get about 1/4 cup of milk chocolate chips and put them into a microwave safe bowl. Melt them in the microwave using 30 second intervals until completely smooth and creamy.
-Dip one side of your fruit kabob into the chocolate

-Sprinkle with your crushed nuts

-Put into refrigerator for about 20 minutes to harden chocolate

-Serve right away, it’s really delicious to throw some whipped cream on top and indulge!

Tips for Driving Safely in the Rain

April showers bring May flowers right? Or is it April showers, bring May flowers, and May flowers bring more June showers? From what they say, this summer is going to be a WET one. One thing I have always hated is driving in the rain, and there is going to be a lot of it. So I started thinking of and researching about some tips on driving safely this summer, and I wanted to share them with you. Check them out:

There’s a few safety features on your car that you can use to make sure that you are doing your best to drive safe while it’s raining
Headlights
I’m always surprised to notice how many cars DON’T have their lights on when it rains. Do they realize how hard it is to see another vehicle thats moving when it’s POURING? Turn on your headlights while driving in the rain – day or night. Many states require it. You’ll see better, and other drivers can see you better too.

Defroster
To clear fogged-up windows, turn on the defroster.

Tire tread
Examine the tread on your tires. Worn tread decreases traction and increases the likelihood of skidding. Test your tread by inserting a penny between the tread upside down: If Lincoln’s head is covered, tire tread depth is good. If Lincoln’s head is uncovered, it’s too low, and the tire should be replaced. Click here for more pro tips on when you should change your tires.

Cruise control
Don’t use cruise control on a wet road, it can misinterpret loss of traction as reducing speed and try to increase acceleration which can be very dangerous.

Windshield wipers and water repellent products
It sounds obvious, but turn on the windshield wipers when it rains. You need a clear view. You can also use rain repellent products on windows to help proactively clear water from the glass. Make sure your wipers are in good condition as well – bad wipers can be worse than not having any wipers at all!

Tips to avoid hydroplaning
Maintain a controlled speed, especially on curves.
Steer and brake lightly; sudden corrections can cause you to lose traction.
Keep tires properly inflated and be sure there’s good tread depth.
If you do start to hydroplane, stay calm, ease off the gas and don’t suddenly apply the brakes or jerk the steering wheel.
Use these techniques for driving in the rain
Keep both hands on the steering wheel at all times.
Eliminate distractions – cell phones, radio, people talking, etc.
Keep six car lengths between you and the car ahead.
Maintain a safe speed. A rule of thumb: Reduce your speed by 10 m.p.h. for each level you increase your windshield wiper speed.
Avoid flooded roads. Deep water can stall your engine and even cause your vehicle to float.
Drive in the middle lanes, since water is usually deeper in the outside lanes.
Drive in the tracks of the vehicles ahead of you.
Be careful around large trucks and buses. Don’t follow too closely; spray from their large tires can hit your windshield and temporarily obscure your vision. Pass with caution, but get around these large vehicles quickly and safely.
Watch for brake lights ahead.
If the visibility is poor, pull off onto the shoulder until it clears.

Car Cleaning Hacks

Cleaning out your car can be one heck of a chore. BUT there are a few hacks that can help make that job a little bit easier.

To do a deeper clean of your seats’ upholstery, make a paste out of vinegar and baking soda. scrub it into your upholstery and then rinse it out. It will take away dirt you didn’t even know was in there! It will also help with smells you didn’t even know were there!

Clean your cars dashboard by applying a few drops of olive oil to the coffee filter. You may want to use an eyedropper to control the amount of oil you apply. You can add more olive oil to the coffee filter as needed. Wipe until dust and dirt are removed! You can also use this method on pleather or leather seats and armrests

Once you get your cup holders clean, but a silicone cupcake liner in them. The liners will gather any gunk that found its way there, and the next time you go to clean the car, all you’ll have to do is take out the liners, shake them out, rinse, dry, and pop them back in! Trust me, you’ll thank me once you start using them!

If you are like me, your pup likes to go in the car – like rides are her favorite thing! ,But the mess she can leave behind is – pretty ick. So since you can’t really help it, and you don’t want to leave those poor puppy dog eyes at home, there’s a super easy cleaning hack to get rid of all that hair. Mist the seat with some water (just use a spray bottle with plain water) and use a squeegee and run it over the upholstery, it will take all the pet hair with it!

Laundry scent balls, or even the ‘crystals’ that help make your laundry smell soo good – can work for your car! Put some in a mason jar and poke a few holes in the lid of the jar – this will help keep your vehicle smelling so fresh and so clean!

Dryer sheets are really good for getting bug guts off your car! Before going to the car wash, take the dryer sheets and rub them across your car,windshield, fender, etc, when you go to wash your car, all the bug guts will come with it!
