3 Ingredient Keto Peanut Butter Cookies
The biggest thing I have missed with being on a low carb diet is sugar. Though most of the cravings have subsided, every once in awhile you still need something to curb that sweet tooth. I am a peanut butter junky so these 3 ingrediet Keto peanut butter cookies were a must.

Though there are a ton of Keto dessert recipes, I tend to prefer things on the simpler side. Less difficult, less ingredients, super simple. These hit the spot, and meet all the criteria for a simple delicious quick and easy snack.

3 ingredient keto peanut butter cookies

 

INGREDIENTS:
1 1/2 cup peanut butter (I’ll save you some time measuring and dirtying your measuring cups, just use a whole regular container)
2 eggs
3 tbsp artificial sweetener (I use Stevia)

DIRECTIONS:
Preheat oven to 350
mix above ingredients together well
Take a spoonful and make into a ball and place on a cookie sheet lined with parchment paper
Use a fork to press into the cookie dough ball into a flat shape
Bake for approx 13 minutes
Enjoy!
*they are pretty crumbly, so use caution when taking them off the cookie sheet

Can you freeze Keto peanut butter cookies?
I would not recommend it; they easily crumble and they don’t taste as good out of the freezer. I would recommend only making what you will eat in a 1-3 day period. Obviously they taste the best fresh out of the oven. I have used the batter a few days later (kept in the refrigerator) and it was still good, but fresh again, is better.

Starbucks Copycat Pink Drink

As we continue my resolution of being money smart, I have started to realize how much money I waste ‘stopping for a drink”. If you add up the couple of coffee stops during the week, a cold pop or energy drink, it really adds up. Twenty dollars or so a week, ends up being over $1,000 a year! So we have started to get creative and try to make our drinks at home.

One of my daughters favorite drinks is the Starbucks Pink Drink. It’s a refreshing drink that is always a thirst quencher – so that was the first recipe we needed to recreate. I think we’ve done a pretty good job, and most of the ingredients I was able to find at Aldi (minus the Tazo Tea, but see below for more info about that). We are able to make approximately 10 drinks for less than $1 a piece!  So here’s your Starbucks copycat pink drink recipe!

INGREDIENTS

  • Cranberry raspberry juice cocktail (now if you want the caffeine like in the Starbucks Pink Drink, use Tazo Sultry Strawberry Tea I can’t usually find it in stores so I order it on Amazon  and its a little pricey so I don’t get it very often, and this juice works pretty well)
  • Frozen strawberries
  • Coconut milk
  • Ice cubes

DIRECTIONS

In a shaker bottle combine the following ingredients:
6 -8 ice cubes
1 cup of juice cocktail, or strawberry tea
1/2 cup coconut milk
6-8 frozen strawberries

Pud lid on shaker bottle and shake well, pour, and enjoy your Starbucks Copycat Pink Drink!

Can you store Starbucks Copycat Pink Drink?
I recommend making it one drink at a time – I’m sure you could store for a few hours but I think anything longer than that it’s just not going to taste as good. The frozen strawberries will be soft and I’m not sure how the coconut milk with the juice would taste after more than a few hours.

2 Ingredient Keto Low Carb Pasta

2 Ingredient Keto Pasta recipe – be sure to pin it! One thing that I’ve missed lately (being that it’s winter, and I need comfort food like my Keto Pizza Rolls) is pasta. We use it in homemade chicken noodle soup, with marinara sauce, Alfredo sauce, so on. So if you are really craving pasta, you have to give this Keto 2 Ingredient Pasta recipe.

These pasta noodles need to be eaten immediately , so they can’t really be made a head of time. But they are pretty easy to make, and don’t take too long to cook, so give yourself about 25-30 minutes or so.

INGREDIENTS
1 cup freshly shredded mozzarella
1 egg yolk
optional: low carb marinara sauce

DIRECTIONS
Preheat oven to 350

In a saucepan melt the cheese and mix until smooth

Add the egg yolk and mix until completely combined

Pour onto parchment paper and cover with another piece of parchment paper

Use a rolling pin, and roll over the covered ingredients until the desired thickness

Place in freezer for 10 minutes or until firm

Place on cookie sheet still covered and bake for approx 8-10 minutes

You know its done once it starts to brown

Remove, and let cool for a minute (to where its cool enough to peel back the paper)

Use a pizza cutter  to cut into strips

Eat immediately.

*If you do allow them to cool, drop them into boiling water for only a few seconds, and then immediately remove

Add your sauce or butter and ENJOY!

How to Start Over in A New City with No Money and No Job

Moving to a new city with limited funds can be done. For those in a similar situation and looking for a way out, the steps below can help you land in a new place with an income, friends, and a place to live.

 

Sell What You Can

Have a garage sale, sell your unwanted things online, sites like LetGo, eBay, Facebook Marketplace or Craigslist. These are all great places to sell and get rid of your belongings. After all, one man’s trash is another man’s treasure, right? Once you’ve successfully sold your things, your moving load will be lighter and your wallet a tad heavier. Moving to a new city with limited funds isn’t a decision that should be made lightly.
