One of our favorite recipes to make on the grill is Campfire Chicken. Super simple, and simply delicious! You will need:
Chicken Breast
Carrots
potatoes (preferably small red, but use what you wish)
green beans
A bottle of your favorite Italian dressing
Foil

Combine chicken breast, cut  carrots, diced potatoes and green beans onto foil, add Italian dress and close foil (you can use foil bags, or just wrap them yourself) throw on the grill and viola! You have a healthy delicious dinner. We make this a lot in the summer, and I love taking leftovers to work the next day (when there are any!)

Patriotic Whoopee Pies

Whoopee Pie Ingredients:

3 C flour
1 1/2 tsp baking powder
1 tsp baking soda
2 C sugar
4 eggs
4 tsp vanilla
1 C soft unsalted butter
1 C sour cream
Red & blue gel food coloring

Whoopee Pie Recipe:

-Preheat oven to 350 degrees.
-Line the cookie sheets with parchment paper.
-Stir to combine the dry ingredients; flour, baking powder, and baking soda.
-Cream the soft butter and sugar until light and creamy.
-Add eggs one at a time, mixing directly after each addition.
-Add the vanilla.
-Alternate adding the flour mixture with the sour cream starting and ending with the flour mixture.
-Mix well.
-Divide the prepared batter into halves.
-In the first bowl of batter add 3-5 drops of red gel food coloring.
-Stir well until thoroughly mixed.
-In the second bowl of the batter add 3-5 drops of blue gel food coloring.
-Stir well until thoroughly mixed.
-Using a small ice cream scoop begin to scoop out the red batter first, leveling the ice cream scoop with a butter knife.
-Place the spoonful’s onto the parchment paper lined cookie sheet.
-Repeat for the blue colored batter and follow the directions listed above.
-Bake the whoopee pie at 350 degrees for 10-11 minutes.
-Cool for 10 minutes leaving the whoopee pies on the cookie sheet.
-Take the cooled whoopee pies off the cookie sheet placing them on a wire rack to cool completely.

Whoopee Pie Ingredients:

1 C soft unsalted butter
1 1/2+ C powdered sugar
1 tsp vanilla

Whoopee Pie  Filling Recipe:

-Cream the butter and powdered sugar.
-Add the vanilla.
-Continue to beat until the filling is stiff.
-Fill a pastry bag with a large star frosting tip.
-Twist the open end of the pastry bag and push the filling out through the tip.
-Match the shapes and sizes of the cooled Whoopee Pies either red on red, blue of blue, or red on blue.
-Select one for the top and the other for the bottom.
-Using the filled pastry bag with the star tip apply the filling in one thick application.
-Place the top on the filled whoopee pie bottom.

Get Pool Smart with pHin

Installing a pool in our backyard has been one of the greatest – and most frustrating – decisions we’ve made. Strawberry Shortcake Milkshake

It is HOT out. So if you are like me drinking or eating anything warm is just not appealing. So I wanted to share this delicious sinful treat, the Strawberry Shortcake Milkshake. Now my kids love it, and what I normally do is leave out the cake mix for myself, use almond milk instead of regular milk and add my strawberry Shakeology packet to it. It’s delicious and healthier option. But it’s O.K. to splurge now and again – you can add the cake mix for an ext

  • Strawberry Layer:
  • ½ cup chopped fresh strawberries
  • 1 tsp vanilla extract
  • ¼ cup skim milk
  • 2 scoops of vanilla frozen yogurt

Ingredients (3)

Cake Layer:

  • 2 scoops of vanilla frozen yogurt
  • ½ cup yellow cake mix
  • ⅓ cup skim milk

 

INSTRUCTIONS

You will need to blend one layer first and set it in the freezer for a couple of minutes, while you blend the second layer.

Combine ingredients for the strawberry layer in a blender and blend until smooth.

Combine ingredients for the cake layer in a blender and pulse until smooth.

Using a large spoon, layer the two shakes on top of each other.

Add some whipped cream to the top and enjoy! ☺
