Rocky Road Cupcakes

Cupcake Ingredients:

1 3/4 C Flour
2 C Sugar
1 C Cocoa
1 1/2 TSP Baking Soda
1 1/2 TSP Baking Powder
1 TSP Salt
2 Eggs
1 C Whole Milk
1/2 C  Oil
2 TSP Vanilla
1 C Boiling Water

Cupcake Directions: 

-Preheat oven to 350 degrees.
-Line the cupcake tins with paper liners.
-Mix the flour, sugar, cocoa, baking soda, baking powder, and salt in a bowl.
-In a separate bowl add the eggs, whole milk, oil, and vanilla.
-Add the bowl containing the eggs, whole milk, oil,  and vanilla to the bowl holding the dry ingredients.
-Mix all together until fully incorporated.
-Beat for 3 minutes on medium.
-Slowly add the boiling water starting with a small amount then pour in the remaining boiling water.
-The batter may be a little runny.
-Scoop  batter into cupcake paper liners until 3/4 full.
-Bake at 350 degrees for 20-25 minutes or until an inserted toothpick comes out clean.
-Remove from oven and allow to cool for 10 minutes.
-Take out of cupcake pan and place on a wire rack until completely cooled.

Rocky Road Cupcake 2-5

Frosting: 

Frosting Ingredients:

1 C unsalted butter, softened
3/4 C cocoa powder
3 C powder sugar
3/4 C heavy cream
Chocolate syrup
Bag of Diced walnuts
Container of Mallow Bits

Frosting Directions: 

Beat the softened butter on its own until smooth.
-Add cocoa and powder sugar alternately with heavy cream  into the creamed butter until it becomes a smooth and thick texture.
-If the frosting is too thick, add more heavy cream, if too thin, add more powder sugar.
-Take a spoon of frosting and turn the spoon upside down and see if the frosting holds to the spoon… if not add more powdered sugar, if so then….
-Scoop frosting into a large pastry bag with a frosting tip.
-Twist the open end of the pastry bag to push frosting to the tip.
-Frost cupcakes….by starting at the outside edge of the cupcake and work to the center of the cupcake.
-Drizzle some chocolate syrup on top of each frosted cupcake and top off of each cupcake with the diced walnuts and mallow bits.

Online Safety for Kids: The Smart Talk Contract

When I was a kid things were pretty simple – you went to school, came home and did homework, went out to play with your friends, maybe watch a little T.V. if it was raining or cold. When I went for a bike ride I was told to be home at a specific time, and I knew the neighborhood boundaries on how far I was allowed to go. The worst trouble we’d get into is going one street over to ride past that ‘cute boys’ house to see if he was outside.

Now here I sit with my kids, video games where you can play and talk with people across the country, social media sites where anyone in the world can talk to you, chat rooms, video chats..it’s a big, scary but necessary world out there in the world wide web. I mean, gone are the days of going to the library to research – that’s what Google is for (and for the life of me I cannot remember what I did before google. If I wanted to know what time a store closed did I really get out a yellow pages, look up the number and CALL THEM?!) homework, research, heck most assignments are assigned via an app  or school website. It’s next to impossible to keep your kids of of it. So where does that leave us?

I cannot even tell you how many debates I’ve read (and been in on) in person and on social media about what you should and shouldn’t allow your kids to do when it comes to being online. This argument is ridiculous to me because it’s kinda of like saying everyone should breastfeed, or everyone should bottle feed, or everyone should have the same curfew; it makes no sense. Not only kids are the same, and definitely not all parents are the same either. Just like other big parent debates, what and how long your kids access the web, is up to you.

Personally I am a bit more liberal in parenting – I say let’s go for it and learn along the way! I am FBI Mom and I would have passwords, etc, but I didn’t have any rules per say. DIY Natural Window Cleaner

Ingredients: 

1/2 C vinegar
1/2 C alcohol
2 TBSP cornstarch
4 C water
1 bottle with spray top

Directions: 

-Combine all liquids first in your bottle… shake…
-Add cornstarch…shake again….
-Add essential oils of your choice.
-Add spray top.
-Shake before using each time.
-You can use old newspapers to wipe down your windows.
