Week 2 of Paleo Friendly Recipe Meal Plans from All in a Day’s Work and Momma Young at Home. If you have any specific type of paleo recipes you are looking for, or that you love,please let us know, we’d love to share and plan that into our week!

Monday – Chicken Parmesan Meatballs

Ingredients Needed:

1 lb. Ground Chicken
1/2 Cup Pizza Sauce – Divided
1/4 Cup Parmesan – Grated
3 Tbs. Italian Flat Leaf Parsley – Chopped
1 Tbs. Garlic – Minced
1/2 tsp. Onion Powder
1/2 tsp. Garlic Salt
1/4 tsp. Black Pepper
3 oz. Mozzarella Cheese

Tuesday – Spaghetti Squash

Ingredients Needed:

1 lb grass-fed ground beef
1/2 cup olive oil
1 onion, chopped
4 cloves garlic, minced
1 small green bell pepper, diced
6-8 large tomatoes
1 (16 0z) can tomato sauce
2 teaspoon dried oregano
1/2 cup fresh basil
1 teaspoon sea salt
1/2 teaspoon cracked pepper

 

Wednesday – White Chicken Chili

Ingredients Needed:

1.5 – 2 lbs. boneless skinless chicken breast, cut into bite size pieces
1 Tb. olive oil
large onion, diced
1 bell pepper, any color, seeded and chopped
1 -2 jalapeños, seeded and diced
4 cloves garlic, minced
2 tsp. salt
1 Tb. ground cumin
1 tsp. coriander
4 cups chicken broth
2 – 7 oz. cans green chiles
3 Tb. thick canned coconut milk (unsweetened)
3 Tb. arrowroot powder
Chopped green onions and cilantro for garnish

 

Thursday – Asian Pepper Shrimp

Ingredients Needed:

3 tbsp coconut oil
4 cloves garlic
1 ½ lb shrimp, raw, peeled, tails on
1 tbsp coconut aminos
1 tbsp fish sauce
1 tsp black pepper
¼ cup chopped fresh cilantro

 

Friday – Noodle Free Lasagna

Ingredients Needed:

1 white onion, diced
1/2 Bag of Quorn Crumbles or 1 LB of Protein of Choice
1 15oz Can Crushed Tomatoes with Basil
3 TBS Tomato Paste
3 TBS Italian Spice Blend
1 Tsp. Granulated Garlic
1 Tsp. Salt
1/2 Tsp. Pepper
4 Cloves Garlic, diced
1 LB of Zucchini and/or Yellow Squash, cut into thin medallion rounds
1/2 C Goat Cheese or Skim Mozzarella, shredded
2 C Greek Yogurt
1 Head Broccoli, roughly chopped
6 Stalks Curly Kale, leaves removed from stems
1 Egg

 

This Weeks Dessert: Paleo Brownies

Ingredients Needed:

2 eggs
1/2 tsp vanilla
6 tbs oil (I usually use 3 tbs apple sauce and 3 tbs coconut cream/oil)
1/2 cup (or to taste) of maple syrup/honey
1/2 cup almond flour
1/2 cup unsweetened cocoa
1/4 cup arrowroot
Chopped nuts
Chopped up bits of unsweetened cooking chocolate

  1. I always feel unprepared when it comes to dinner time. It’s 2:30, I’m at work and have no idea what I will make tonight. Maybe some white chicken chili? I definitely appreciate the ideas.
