Pina Colada Dip

This is a fun, light treat for those hot days – that everyone seems to love! If your kids don’t like coconut (like one of mine) sub for pineapple juice!

This recipe will yield 3 cups of Pina Colada dip:

INGREDIENTS
8 oz brick of cream cheese, softened
1/2 of 13.5 oz can coconut milk
1/2 cup Dole Pina Colada juice (or pineapple juice)
1 teaspoon coconut extract
8 oz Cool Whip, softened

DIRECTIONS
1.   In a large mixing bowl, add the cream cheese. With an electric mixer on medium speed, beat the softened cream cheese until smooth (about 1-2 minutes).
2.   Add the coconut milk, juice and extract. Mix on low speed for 1 minute.
3.   Fold in the Cool Whip.
4.   Chill for 2-3 hours.
5.   Transfer to a serving bowl and serve with your favorite fresh fruit, graham crackers, Nilla Wafers, etc.
6.   ENJOY!!
