This is an easy, fast and delicious low carb meal that your entire family will love! For my son I leave the jalapeno out,(and just add extra to yours!) This taco cauliflower rice will be a great meal (or side dish) for your family.
INGREDIENTS:
1 10 oz package of cauliflower rice
1 oz package of taco seasoning
⅓ cup red onion – chopped
2 Tbsp oil – vegetable, olive or preferred
1 tsp minced garlic
1 fresh jalapeno
INSTRUCTIONS:
In a large skillet, saute chopped onion with oil and minced garlic. Cook until onions become tender and translucent.
Add cauliflower rice and taco seasoning. Continue to simmer until cauliflower rice is cooked.
Stir in a preferred amount of chopped fresh jalapeno.
