Easy Peasy Cheesy Chicken Monterey with Knorr Rice

If it’s one thing I love, it’s an EASY recipe. When I find an easy and delicious recipe is when it goes into my meal rotations, and that’s exactly what I found in the Knorr Rice Cheesy Chicken Monterey. It’s fast, affordable and delish! The prep and cook time is only about 20 minutes – that’s what I call a quick meal!

My family loves Knorr Rice as a side – in fact, I usually have to make at least 2 bags of rice, if not 3 at dinner time. So when I served them a main dish with Knorr Rice I knew it was going to be a hit.  I added a bit of pepper to mine and my husband’s to kick it up a knotch, but the kids don’t really like the extra spice. It’s easy to add (or leave out) whatever to appease your families palate.

INGREDIENTS
1 package Knorr® Rice Sides™ – Chicken flavor
1 can (11 oz.) corn, drained
1 can (11 oz.) black beans, rinsed and drained
1 can (4 oz.) green chilies, undrained
1 lb. boneless, skinless chicken breasts, thinly sliced
1 cup shredded Monterey Jack cheese
DIRECTIONS
Prepare Knorr® Rice Sides™ – Chicken flavor according to package directions. Stir in corn, beans and chilies.
Meanwhile, heat 1 tablespoon vegetable oil in large nonstick skillet over medium-high heat and cook chicken, stirring frequently, until chicken is thoroughly cooked, about 4 minutes.
Arrange Rice mixture on serving platter, then top with chicken and cheese.

  • I used to eat Knorr sides all the time in grad school. Add some chicken or veggies to one packet, and it's a cheap meal for one!
