Low-Carb Keto-Friendly 90 Second Bread

So as you know I’ve been doing this Keto diet for nearly a month; I haven’t had a hard time with craving things I’m not allowed to have (which has been surprising really) and I’ve felt very satisfied with everything I eat. There isn’t another way of eating that I know of that you can eat such delicious food!

However I woke up this morning with an upset tummy and my go-to has always been some big carb ridden food – like crackers, or bread, etc. I didn’t have time (or really the energy) to try and make a loaf of bread or figure out any other type of food that might hit the spot. So after a ton of googling and reading through forums, I found a 90 second bread recipe – and I have to say I was quite impressed.

Ingredients:
3 tablespoons almond flour
1 egg
1/2 tsp baking powder
1 1/2 tablespoon butter (melted)

Mix all the above ingredients in a bowl.
Stir and mix until as smooth as possible.

Put into desired dish – I put mine on a small plate.
Put in microwave for 90 seconds.

When it comes out of the microwave its still pretty light looking like the above pic, but fluffy. I decided I was going to make a grilled cheese so I cut the bread in half and put butter in a skillet and ‘fried’ both sides until golden brown. Then I added cheese and put the bread together.

It was absolutely delish! I could of ate more, but it really gave me that comfort food feel – and I didn’t go over my carbs!

For one serving of the bread (cheese and extra butter not included) 2 carbs, 17.6 grams of fat, 7.1 protein, and 250 calories.
**UPDATE** I have had a lot of questions about the nutritional value, and it varies depending on what type of almond flour , even the type of eggs you use. Please be sure to calculate your ingredients individually and do not base your diet upon the nutritional value given here. There are a ton of online (and phone apps) that will help you calculate correctly.

I think tomorrow I may add some chicken broth and have a really delicious lunch.

    Are you using the whole recipe for 250 calories?
    I can barely get a full recipe less than 400.

      Yes – I had this question in a Keto group I am in, and it looks like we were using different brands of Almond Flour, and that made the difference. It also depends on what calculator you are using, I’ve noticed My Fitness Pal was not pulling up correct info for a lot of the items. I know it’s very frustrating!

    I love this.
    Almond flour 1/4–3 TB—–160 calories 3 carbs
    Egg 70 calories 0 carbs
    baking powder 0 calories 0 carbs
    I cant believe its not butter liq in bottle is 0 calories 0 carb

    I did mine in a 1.5 square cup plastic and got 4 think slices
    put in pan and toasted in pan. DELISH!!!!!!

    OMG, just made this and it’s sooo good. Finally a bread that tastes like bread. I even fried it to give it a little crunch like toast. I’m hooked!!

    Is there a conventional oven option? How would that be done?
    We do not use the microwave.
